Avocado Mayonnaise

This avocado mayonnaise is a simple, yet elegant companion to your oven roasted veggies, chips, crisps and whatnot.

Avocado Mayonnaise – Ingredients


  • 1 small avocado, or ½ medium sized avocado
  • ½ cup of vegan mayonnaise
  • juice of ½ a lemon
  • garlic, salt and pepper to taste


Cut avocado in half vertically. Twist halves until one half detaches from the pit. Gently hack a knife into the pit and pull it out.

Scoop out the avocado flesh and put it in a jug or blender. Add vegan mayonnaise, lemon juice, garlic and your seasonings.



Yes, it really is that easy.

      No. Well, that is, it becomes a lovely pastel green, thanks to the avocado, but it should not turn brown at any point. That’s one of the reasons for adding the lemon juice. (The other reason, of course, is because it enhances the flavour.)

      1. Basil mayo may change – very dark, if basil is added after the process is completed and fresh for only 5 days. I have yet to make it to test this theory. But, I will make it soon.
