Meal Prep January 2020

No energy, no shopping done. I had to make do with what I still had in the house. But I still wanted to do my weekly meal prep.

Let’s jump right in, shall we?

First things first. I wrote a list.

Meal Prep Plan

I soaked 1 cup of white beans overnight. The next morning I got out my Instant Pot, and pressure cooked my beans for 15 minutes.

I had this enormous cauliflower, that could easily feed 4 people. I also had two large avocados, one of which was very ripe and needed to be used pronto.

So I made a nice, creamy cauliflower soup. I made an avocado curry, using up that very ripe avocado and some cauliflower. I made oven-roasted veggies, again featuring cauliflower. And then I still had more cauliflower left, so I simply put that (cleaned and cut into florets) in a glass container to use later this week.

I made a nice big pot of rice pudding. I made two servings of my Boozy ABC Pudding. I made some Avocado Mayonnaise. And finally, I soaked some cashews and made some sweet cashew cream to top my ABC pudding.

It took me a couple of hours, spread out over the day, but when I was done, I had all my meals for the next four days ready in my fridge. That’s not bad.

Not bad at all.
