Unless you’ve been living under a rock, you’ve surely heard of this weird, but utterly delicious and – dare I say it? – decadent pudding. In its simplest form, it consists of just three ingredients: avocado, banana and cocoa. That’s it. No added sugars or other sweeteners, no other dodgy ingredients. Just these three.
But I have my vices. I like booze. In very moderate amounts, mind you, but I love to smuggle it into my culinary creations as often as possible. So here’s my fully grown-up version of this otherwise ridiculously healthy dessert.
- 1 small avocado, or ½ medium sized avocado
- 2 bananas
- ¼ cup cocoa powder
- 1 tbsp Baileys, or vegan alternative (Amaretto or Licor 43 would work well)
Cut avocado in half vertically. Twist halves until one half detaches from the pit. Gently hack a knife into the pit and pull it out.
Scoop out the avocado flesh and put it in a jug or blender.
Peel bananas and add them to the jug or blender.
Add in cocoa and booze.
Blend until smooth and creamy.
Serve in a nice glass, topped with chocolate shavings and/or whipped cream
